PAVILION REGULATIONS:

Please take time to read these regulations, as they will provide you with essential information.

 

PAVILIONS OPEN FROM 2pm – 4pm WEDNESDAY 30th SEPT and 8am – 11.30 am THURSDAY 1st OCT

OCTOBER.

 

ALL EXHIBITS FOR PAVILION CLASSES TO BE IN THE HANDS OF THE STEWARDS BY 11.30 AM THURSDAY 1ST  OCTOBER 2009 (LATE ARRIVALS CANNOT BE ACCEPTED). THIS CLOSING TIME WILL BE RIGIDLY ENFORCED. EXHIBITORS MUST ENSURE THAT EXHIBITS ARE COLLECTED AFTER 5 PM SATURDAY AND NO LATER THAN 6 PM OR THEY CAN BE COLLECTED FROM THE SHOW OFFICE THE WEEK FOLLOWING THE SHOW.

 

*Exhibitors must leave their exhibit card with the article entered & exhibit must be presented, ready for

judging.

*Pavilions close at 4.30 pm Saturday, to allow stewards preparation time for collection of entries from 5 pm.

*First prize winning exhibits in previous Swan Hill District A & P Shows cannot be entered again in the same

class.

*Work to have been done within the last two years in senior sections and the last 12 months in junior

sections.

*Laundered or soiled work will be disqualified.

*When more than one article makes up an exhibit, each article must bear a card with class and exhibit

number on it, or all articles must be mounted on one card or board.

*Entry forms MUST be presented to claim entries at closing of the Show.

*ALL PRIZE MONEY can be collected from the Chief Stewards in Centenary Pavilion from 3 pm – 6 pm

Saturday.

*Any prize money not collected by the 9th October 2009 shall be forfeited and paid to the general account of

the Swan Hill District Agricultural & Pastoral Society.

*Aggregate Points are calculated:

First = 2 points   Second = 1 point

*Award for overall Most Successful Exhibitor, in Centenary Pavilion, donated by R.W. Hall & Family, Mallan.

*A Bowl is a vessel of which the width is greater than its height.

*A Vase is a vessel of which its height is greater than its width.

*A Container is any shaped vessel which contains water and two or any number of stems unless otherwise specified.

*Spike - elongated axis usually unbranched bearing stalked or stalkless flowers as in cymbidium, foxglove, gladiolus or hollyhock.

*Stems must exit from bottles according to schedule eg one stem, means that only one stem can protrude from the bottle, all other branches must be well above the top of container.

*Paper or foam may be used to stage the exhibits but must not protrude above the container.

*Novice: Open to all exhibitors who have never won a Prize in any of the Novice classes

SHOW COOKING HINTS

Plain Scones

·                Dainty 5 cm. round

·                Uniform in shape and colourings.

·                Free from excess flour, particularly on base

·                Texture light and fluffy when opened.

 

Sweet Scones 

·                Same rules apply as above

·                Add tablespoon castor sugar

·                ½ cup fruit to mixture

·                Don’t have fruit bulging out.

 

Chocolate Cake

·                Fine soft mixture blend cocoa with a little warm water and cool before adding to mixture.

·                Add vanilla at the creaming butter and sugar stage. This applies for all butter cake mixtures. This will enable you to get the   full flavour and aroma right through the cake.

 

Boiled Fruit Cake

·                Fruit well mixed in

·                Should have nice shiny surface

·                No cracks. No soggy core. 

 

Orange Cake

·                Finely grated orange rind beaten with the butter and sugar.

·                Slightly warmed juice used sparingly

 

Small Cakes with Fruit

·                Moist fine texture

·                Peak to rise above paper.

·                If oven not hot enough they spread rather than rise

 

Biscuits

·                Daintiness of size and shape, uniform size.

·                Where distinct varieties are called for, separate mixtures must be used.

·                Should be crisp. ie snap in half cleanly.

 

Cooked Slices

·                Dainty even shapes

·                Do not exhibit the outside crusty pieces

·                If weeping, sign of over cooking.

 

Swiss Roll

·                Golden brown, no cracks

·                3 full turns in roll, uncut ends

·                A roll, not a fold

·                Red Jam slightly warmed prevents seepage.

·                2 layers of identical thickness & colour.

Potato Cake

¾ cup mashed potato

1tablespoon butter

1small cup of sugar

1 beaten egg

2 cups S.R. Flour

a pinch of salt

½ cup milk

1 cup mixed fruit.

Method: Cream together mashed potato and butter: add sugar and beaten egg: S.R. Flour, salt, milk and

mixed fruit. Cook in a moderate oven for approx 30 minutes. Topping optional.

Cream Cheese Fruit Cake

185gm Butter                

1 x 250 gm packet cream cheese

2 teaspoons. Grated Lemon Rind           

1 teaspoon Vanilla Essence

1 ½ cups castor sugar               

4 Eggs

1cup plain flour             

1cup S.R flour

1 ¼ cups sultanas                    

½ cup chopped Glace Cherries

Lightly grease a deep 23 cm round cake pan, line base and side with paper; then grease. Beat

butter, cream cheese, rind and vanilla essence in small bowl with an electric mixer until light and

fluffy. Add sugar beat well. Gradually add eggs, one at a time, beating well between each addition. Transfer mixture to a large bowl; stir in sifted flours and fruit in two batches. Spread mixture into prepared pan, smooth top. Cook in a moderately slow oven 160 deg C (325 deg F) for 1¾ hours, or when cooked when tested.   Cover with foil if top becomes too brown. Cool in pan.

Rich Fruit Cake Competition

The following recipe is compulsory for all entrants. Here’s what you need: -

 

RICH FRUIT CAKE

250g sultanas

250g chopped raisins

250g currants

125g chopped mixed peel

90g chopped red glace cherries

90g chopped blanched almonds

1/3 cup sherry or brandy

250g plain flour

60g self raising flour

1/4 teaspoon grated nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

250g butter

250g soft brown sugar

1/2 teaspoon lemon essence OR finely grated lemon rind

1/2 teaspoon almond essence

1/2 teaspoon vanilla essence

4 large eggs

 

Here’s what you do: -

Mix together all the fruits and nuts and sprinkle with the sherry or brandy. Cover and leave for at least 1 hour, but preferably overnight. Sift together the flours and spices. Cream together the butter and sugar with the essences. Add the eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures. Mix thoroughly. The mixture should be stiff enough to support a wooden spoon. Place the mixture into a prepared tin 20 cm and bake in a slow oven for approximately 3½ - 4 hours. Allow the cake to cool in the tin. NOTE: To ensure uniformity and depending upon the size, it is suggested the raisins be snipped into 2 or 3 pieces, cherries into 4 or 6 pieces and almonds crosswise into 3 or 4 pieces. Regulations An exhibitor having won at a Show will bake another cake for entry in the Group Final; the winner will then be required to bake a further cake for the State Final at the next Royal Melbourne Show. An exhibitor having won at Show Level is not eligible to enter any other Show until after the Group judging, when, if not the winning entry, can compete further. An exhibitor is only eligible to represent one Group in the State Final.

             An exhibitor having won at Group Level cannot compete further until after the Royal Melbourne Show. Each cake entered must be the bona fide work of the exhibitor.

             If for any reason a winner is unable to compete at Group or State Final level then the second placegetter is eligible to compete.

OO1    Sunbeam Boiled Fruit Cake Competition

The following recipe is compulsory for

all entrants:

 

Sunbeam Foods –

Junior Boiled Fruit

375g Sunbeam Mixed Fruit

¾ cup brown sugar

1 teaspoon mixed spice

½ cup water

125gm butter

½ teaspoon bicarbonate soda

½ cup sherry

2 eggs, lightly beaten

2 tablespoons marmalade

1 cup self-raising flour

1 cup plain flour

¼ teaspoon salt

 

Here’s what you do: -

Place the Sunbeam mixed fruit, sugar, spice, water and butter in a large saucepan and bring to the boil

Simmer gently for 3 minutes, then remove and allow cooling.

Add the sherry, eggs and marmalade, mixing well.

Fold in the sifted dry ingredients then place in a greased and lined 20cm round cake tin. Bake in a

moderately slow oven for 1½hours or until cooked when tested.

Regulations:

An exhibitor having won at a Show will bake another cake for entry in the Group Final; the winner will then be required to bake a further cake for the State Final at the next Royal Melbourne Show.

An exhibitor having won at Show Level is not eligible to enter this section in any other Show until after the

Group judging.

Each cake entered must be the bona fide work of the exhibitor. If for any reason a winner is unable to compete at Group or State Final level then the second placegetter is eligible to compete.

Method:-Beat butter and orange rind until soft and creamy. Add sugar, beat until light and fluffy. Add eggs one at a time. Stir in sifted flour and bicarb. soda with sour cream. Mix until smooth. Line base and   sides of a bar tin, approximately 23cm x 10cm. Spoon mixture in, smoothing out bubbles with back of spoon.  Hollow centre to allow for rising and cracking.

Bake at 160 - 165 deg C for 40-45 minutes. Allow to get cold. Ice with 1 cup of icing sugar mixed to a firm

paste with orange juice. Decorate with a fork or strips of orange rind.

1 cup Sugar

1 cup chopped dried apricots

60gm. Butter

½ cup sultanas

½ cup currants

1 egg

2 cups Self Raising Flour

 

Method: Put sugar, apricots, sultanas, currants and butter into a bowl. Pour over 1 cup of boiling water.

Leave to cool. Mix in a beaten egg and sifted flour. Bake at 180deg. For 1 hour.

Sweet Muffins

1 ¾ cups S.R flour        

4 tbs Castor sugar

1teaspoon baking powder          

1 cup chocolate chips

¾ cup water

½ cup Full Cream Powdered Milk

1/3 cup butter

1 egg, lightly beaten

 

Method: - Preheat oven to 200 deg. C.

Brush muffin tins with oil. Sift flour, sugar and baking powder into a small bowl and stir in chocolate chips. In a small bowl, combine egg, milk, and melted butter – mix well. Add liquids all at once to flour mixture. Stir gently with a fork until all dry ingredients are just combined. Mixture should look lumpy. Spoon into muffin pans, filling each 2/3 full. Bake 15 minutes till golden brown. Remove at once from tin and place on a wire rack.

·          Each article must be made from Pure Wool/Wool Blend with Natural Fibre (eg mohair,

        alpaca, cashmere, etc) of any ply and must have attached label from wool used or label or  receipt form Woollen Mill.     

·          An exhibitor may represent only one Society at Group level and one Group at State level.

·          An article having won at a Show will compete at a Group Final; the winning article will then compete at the next Royal Melbourne Show.

·          An article, having won a State Final, is no longer eligible to compete in the competition.

·          Each article entered must be the bona fide work of the exhibitor.

·          If, for any reason, a winner is unable to compete at Group or State Final level, then the second placegetter is eligible to compete.

·          A person will not be permitted to win at more than one Show within the State in any one Show year. Persons not adhering to this rule will be required to forfeit/refund prize money.

ALL PRODUCE MUST BE GROWN BY THE EXHIBITOR ON FARM OR PREMISES.

Entries must be staged in Pavilion between 8 am and no later than 11.30 am on Thursday October 1st. Late entries will not be accepted. Diseased entries disqualified. No Commercial entries.

First = 2 points   Second = 1 point.
